Nick, There are a couple possibilities.  I'll start my saying, you should be using VW, Bosch, Mann or Mahle filters on your car, additionally, depending upon your climate a heavier weight oil might help (I run 20W-50 year round in Maryland).  Usually, if the oil weight is your problem the light will come on after exiting the highway or after another high speed run.
If your symptoms are similar to this, check your filter and oil weight.
Other possibilities include bad oil pressure sensors, or a failing oil pump.
If you are handy, I'd suggest getting a Bentley manual for this car and tracking down and fixing the problem yourself.

check your fuse box top left relay, this triggers the oil light intermittently.

The problem may be due to the strainer on the bottom of the oil pump. these oftern become blocked up. they can be easily removed and cleaned.
