Many cards in magic have costs associated with them that are not mana. Usually tapping is a cost of abilities on cards, but spells you cast may also tell you to tap things. Older cards use a symbol that looks like a sideways T, newer cards use a black diamond with a swirling arrow. When you "tap" something, you turn the card sideways to denote that it is tapped. Once a card is tapped it you can only untapp it at the beginning of your turn, during your untap step.

Some spells and abilities just use the word tap itself, to tell you to do something, like "tap 3 creatures you control: do something".
