How do I change or fix my rear wheel bearings on a 92 plymouth voyager

very simple  lift rear of van take off hub caps leave tire on drum take off dust cap on hub remove cotter pin and nut slid tire and drum off bearing will be there repack and install in reveres

I replaced the inner and outer it seems to work good for a day then it starts to grind when I turn left. I tighten up the nut a little more.  It seems that the hub is gringing on the gear piece where they are pressed together. WHY    How tight are you suppose to tighten nut??
