I am installing lights under the cabinets in my kitchen...

I am installing lights under the cabinets in my kitchen (small round halogen sport lights).  I bought a touch dimmer switch for them which allows me to mount a touch pad under the cabinets and then use that to turn them off and on.  I can plug 3 different lights into this dimmer switch and then plug the dimmer switch into an outlet.  However I do not want to see the cords from the dimmer switch plug so I want to know if I can cut the plug off of the switch and hard wire it up in to the ceiling and in junction boxes?  Will the standard wiring of the dimmer switch (lamp wiring) hold up or do I need to switch it out for stronger wiring?

You can hardwire most under counter lights. using the wire that came with the lights, probably 12/2, is not recommended.  If you are going to "run" wire through the walls and ceilings check with local codes to see if you need to run,emt pipe, if not then I would upgrade to a 12/2 romex or greenfield it will give you a alot more protection than the standard packaged wire.  Also a little bit of advise, when ever you have a device such as lights with a cord on them just cut off the cord and make the connection within the outlet box, it looks more attractive. Remember to keep the polarity correct usually one side of the wire has a ridge or lettering the other will be plain and smooth.
