I am trying to change the rotors on my 1995 dodge 2500 ram...

I am trying to change the rotors on my 1995 dodge 2500 ram van.  But I cannot get to cog/sprocket looking thing off of the old rotor to put on the new rotor.  How do I get it off?  do you have instructions for the brake/rotor assembly?
