I have a 98 Jeep Cherokee the temp guage shot up all the way...

I have a 98 Jeep Cherokee the temp guage shot up all the way I replaced the thermostat and lower hose it ran fine for awhile then the same thing happened again.Also when I first start it and take off it will suddenly shut down after a couple of minutes I can start it again by putting the accelerator to the floor and the it runs but i have to keep the rpm'above 1000 for awhile then it runs fine.Can someone help me as to what the problem is?
