The scenario is this.
I have a creature in play and then I use Unstable Mutation which reads (Target creature gains +3/+3. During the upkeep phase of each of it's controller's turn, put a -1/-1 counter on the creature. These counters remain even if this enchantment is removed before the creature dies.) Question is: If I use Mystic Veil on that creature, making it immune to spells or effects, will it make it immune to Unstable Mutation's effect of putting a -1/-1 counter onto it every turn? I understand that putting a counter on that creature is a new effect which will bounce off by Mystic Veil even coming from an already cast in enchantment.

All the Veil does is make your creature untargetable. All this means is that spells and abilitys that say the word "target" can not target your guy. The mutation doesnt say "put a counter on target creature", it just say "enchanted creature". If they try to cast a terror, or lightning bolt, etc, they cant hit the enchanted guy. If they cast a wrath of god, well there is no "target" in the text of wrath and your out of luck.
