there is a card called seeker of skybreak it has an effect of untap target creature if my opponent attacks me with a penumbra wurm it is a 6/6 can he untap that creature and attack me again

No he cannot..There is only one attack phase during each turn..If he has such cards as Seize the Day or Relentnauss Assualt or Aggrovated Assualt he or she may..But not with a Seeker of Skybreak
