How does a logarithmic amplification circuit look like? And how do I design one to amplify the pulse received by an ultrasonic speaker? I'd like to amplify the signal received by the ultrasonic transducer so that the pulses varying only a little even when the pulses themselves varying a lot

Log amplifiers usually apply a transistor
junction in the feedback path of an opamp.
If you look up some application notes from
National Semiconductor, Philips, Burr-Brown
(just to mention a few), you should find something.

However, for your application it seems
more appropriate to pass the signal through
a comparator (LM339 or alike) or a Schmitt-
Trigger (CD4093). The information you need
probably is in the time difference between
sending and receiving and not in the amplitude. So "clipping" it will do the job.
