If I deal 10 damage to Darksteel Colossus, and after that I give him -1/-1, does he die?

No, because it is still lethal damage that is trying to kill it, not a state-based effect of "put into graveyard.

Any time a creature has damage equal or greater than its toughness, it is destroyed. In this case the toughness becomes 10, and it has 10 damage on it. The game tries to destroy the colossus, and finds that it cant. (this is because the word destroy is specifically used in the effect that kills damaged creatures).

Any time a creature has a toughness of 0 or below, that creature is put into its owners graveyard. Notice that the word destroy is NOT used, so if you give a colossus -11/-11 its indestructibility will NOT save it.

so blocking with 2 Vizzerdrix wont kill it but enough -X/-X cards will?
By kill, I mean have is shuffled back into owners library

BUT, the benefit to the DSC is that even if the player manages to kill it, it will still just go back into the person's deck again. You can never completely be rid of it.
