Can a creature with an ability play it any time as if it were an instant, presuming the creature is not already tapped.
Lets say I'm attacked by an opponent's creatures, could I assign my healers to prevent damage to my now selected blockers? At what stages could this be done?

ALL abilities of creatures ARE instants unless it specifically says that you can only play it as a sorcery. You can use your healers ability after attackers are declared, after blockers are declared, after damage is assigned, or whenever. Any time you could normally play an instant you can play and ability of a creature. If your not sure about turn structure and priority, check out that section of the general rulebook...
