What is mana burn?

Mana burn is what happens when you have extra mana in your mana pool. For this, you take direct damage off of your life equal to the amount of unused mana in your mana pool by the end of your turn. For example, if you cast a spell that costs 7 to play, but you have spent 8 mana to play it, and you pass turn, that extra one mana you didn't use would come straight off of your life total.

Actually, Mana Burn happens at the end of any phase if you still have Mana in your Mana Pool, unless a card prevents it.  Remember that mana burn is loss of life, not damage, so you cannot prevent it by normal means, such as Circles of Protection, etc.

See rule G13.6a - When a phase ends, any unused mana remaining in a player's mana pool is lost. The player loses 1 life for each mana lost this way. This is called "mana burn." [CompRules 2003/07/01]

and also rule 300.3 - When a phase ends (but not a step), any unused mana left in a player's mana pool is lost. That player loses 1 life for each one mana lost this way. This is called mana burn. Note that mana burn is loss of life, not damage, so it can't be prevented or altered by effects that affect damage. This game action doesn't use the stack. (See Rule 406, "Mana Abilities.") [CompRules 2003/07/01]

There are 5 phases:  G16.6a - Each turn is divided into five phases: beginning, precombat main, combat, postcombat main, and end.

not an answer a question does mana burn make you sacrafice the land that you got mana burn from?
