Cumulative upkeep. Now as an example i have a card that has cumulative upkeep of 3 colorless.

Would i just have to pay the three every turn or would the upkeep, double every turn?

You'd be correct. You would have to pay double the mana next turn, then triple, and so on.

You pay 3 + the last payed amount. Double and triple makes it sound confusing.

The first turn you pay 3, the 2nd turn you pay 6, the third turn you pay 9, the fourth turn you pay 12.. etc..
