does a fax product (modem or machine) exist that can detect a fax call even when a human has already answered the call, without requiring the human to press any buttons?  if so, what product(s)?  if not, what fax software products exist that make it very easy to activate them when an unexpected fax call is received?

I think so. This, from HP's site:

:: If a person answers the call, and it is an incoming fax
:: (CNG tones will be present), wait for the HP all-in-one
:: or fax product to react to the CNG tones, then hang up
:: the phone.

The human doesn't have to press any buttons, simply wait for the fax to pick it up.
