I have a Defensive Formation enchatment card. The card specifies that instead of attacking player I (Defending player) decides how attacking creatures deal combat damage.  Does this mean i could have them do damage to themselves? The attacking player? My invisible friend named bob? HELP!!

You just make the normal decisions they would make. Normally the attacker divides the damage between any and all blockers. If they attack with a 4/4 and you block with 2 2/2's they will most likely divide the damage 2 to each. Now with defensive formation out, you can divide the damage, 4 to one, none to the other...

Can i redirect damage from a flying creature to a no flying creature ??
And can i Redirect all the damage to 1 creature ?? like if 4 creatures attack redirect them all to 1 creature?
