If a sorcery spell resolves right away and doesn't use the stack, do I untap the mana right after it resolves, or do I have to wait until my untap phase next turn before untapping the land? Thanks in advance.

No spell resolves right away. All spells use the stack. Mana abilities and morph dont use the stack. Everything else goes on the stack and waits to resolve. At the beginning of your untap step you untap all permanents. Unless you have some other way to untap them, you cant just untap lands for nothing. If you pay 3 mana for a sorcery, and that spell resolves, your lands stay tapped untill your untap step.

once its tapped, its tapped, just like your mom.

only other cards that untap cards would work, or you wait till next 'untap' phase. just like your dad.
