If i played a black card that reads "target player sacrifice...

If i played a black card that reads "target player sacrifices a creature" and all of my oppontent's creatures had protection from black, would they still have to sacrifice one since the card targets the player and not any specific creature??

Yes, they would still have to sacrifice a creature because it is targeting them and not the creature that has protection.  I use cards that do that also, like Diabloic Edict and Chainers Edict.
