Do Summon cards count as creatures when put into play? Will a card that says "destroy target creature opponent controls" take out a Summon like "Gang of Elk(Summon Beasts)" or "Yavimaya Treefolk(Summon Treefolk)"?

Cards that use the text "Summon - Something" is the old way that they use to write creature cards. New cards say "Creature - Something". Either way they are both creatures. If there is a power and toughness on the card, its a creature.

A "summon <type>" card is just an old way of saying "Creature - <type>". Summon or Creature are all creatures.
