What is worn at a Jewish conversion?

Nothing.
Actually, "street clothes" are appropriate for appearing before a Bet Din Tzdek.
The "nothing" comment is because halakic (according to Jewish law) conversion of both men and women requires immersion in a ritual bath (mikwah) or other acceptable body of water - nothing can come between the convert and the water, ergo my initial response of "nothing."

Suggest you address additional questions to a competent rabbi.
