Eostre, the anglo-saxon/germanic goddess of renewal and fertility. Her symbols are hares, eggs and the full moon. And her name, as you can see, was adapted as the name for the christian festival.

Maia perhaps? Since May was named after her and all, and she's the goddess of spring and new beginnings. ;)

fundamentally flawed question.  There are any number of Spring goddesses depending on what pantheon you refer to.  "Pagan" does not refer to any one cohesive religion, so there is no one goddess of Spring
