Does protection from the color of your choice mean that it is all cards of that color including spells and blocks?

It's just like you add to the text of your creature's card "protection from color", where color is some color you pick (generally once). Protection means it can't be target of any spells from that color neither take any damage in combat from creatures from that color. It means also that it can't be blocked from any creature from that color. Note that global effects aren't cover from "protection from" abilities.
