I saw Dr Walford on a PBS special recently. I became interested in his diet plan. After looking at some of the sample recipes I was disheartened. How can the average person, especially low income people eat this stuff? You have many exotic ingredients which most people who do not live near major cities would rarely or never find in their local supermarkets. If they can the cost would be too great to buy many of the items, (kombu, kale,tahini "what the hell is tahini?" , garbanzo flour, whole wheat pastry flour " now that is a real common item in my local market! ", I could go on and on........
Hey, can you give me a break????? Even if I could get all these items it would cost a bundle. Is this really a sustainable diet for the average person? I think not.
So do you have any recipes which us "average people" might be able to work with?
I am sure this Dr. Walford is a very smart man and what he is saying about his diet is true but...................is he living in some Ivory Tower in a university or the "real world" like us average people.
I am dead serious about what I am telling you. I am not trying to insult Dr. Walford or to berate his work or findings. I just want some answers. Can you help me?
I am very interested in living a long and healthy life.

Stephen,

Doctor's bills and hospitals are not cheap either.  I believe that eating nutritionally well as Dr. Walford advocates is cheaper than this.  Perhaps you cannot locate all the ingredients he suggests, but I have a couple of his books (at Walford.com) and many of the ingredients are available in most towns.  My own town of 33,000 has several grocery stores with most the materials he recommends.  Also, you will be cutting out or down on many ingredients that are rather expensive.  I suggest you look at Walford.com for further info.

You can keep making up excuses as to why you shouldn't change or you can commit to a healthy lifestyle. It is up to you.

This is a really old question, maybe has been answered, but I would like to add my "two cents".  Kale is available nearly everywhere, it is a green in the produce section.  You can cook any dark leafy greens without fat and it is cheap!  Beans are cheap, cook them yourself, use spices,cook in wine or fat-free broth, whole wheat pastry flour is non-essential, use any whole wheat flour, it too is cheap, eat fruit in season, all veggies in season or frozen, potatoes are cheap, this whole diet is cheap.  I have cut $100/week from food budget for 3 since we went back to vegetarian 10% fat meals.  any veg low-fat site will give sensible, tasty recipes.  By the way, Kombu is seaweed, dried, in most grocery stores now, and also CHEAP.  Less than 2 bucks for a major supply.
