I just bought a Mirro 12 quart pressure canner.
It can operate at 5, 10, or 15 psi. I would like to know how I set it at different psi's

The weight that sets the psi comes to pieces. I had trouble with this at first but if you hold the silver part the pull the black part out a little then twist the black part it should come to pieces. the instructions are in the book that it comes with. Once you have taken the thing to pieces it should make sense. Hope this helps.
