5.07 Has anybody noticed that the logo at the beginning changes?

  Yes.  The variations of the opening animation are documented in the
  _Frasier_ Program Guide.  (See "Is there an episode guide?")

  The color of the "Frasier" in the opening title graphic indicates the season
    Season 1: Blue
    Season 2: Red
    Season 3: Green
    Season 4: Purple
    Season 5: ?
