Actually it's not that difficult... I allow anyone within *known*
companies that I deal with (including my own of course!) and anyone
who I don't "know" gets the following message:

From: no spam (Pablo Sanchez)
Subject: Spam == Ick!

Due to the high volume of unsolicited e-mail messages that I receive
per day I am now filtering all e-mail that is sent to me. My filter
tries to allow most "friendly" sites in. If you are receiving this
e-mail it's because my filter needs a "little manual adjustment."

Your message dropped into my "deleted" folder to be viewed later. No
need for you to re-type it, simply send me a message that has the
following phrase in it:

Subject: not spam

and I'll fish out your original message from my "deleted" folder and
read it and act. Again, there is no need to re-type it.
