I use BBEdit on my Mac, which is **by far** the best text editor for any
purpose - writing in HTML, coding in C, writing manuals, writing PowerTalk
letters, reading really large textfiles, etc. The latest versions of BBEdit
(3.5 and up) come with a tool bar which gives you access to many different
HTML commands, allowing you to embed HTML in your document without having
to type up everything manually. BBEdit doesn't advertise in your HTML's
header, either.
The WWW site for my FAQ (alt.games.final-fantasy) was created using BBEdit
primarily: <http://orion.edmonds.wednet.edu/Misc/FF/FAQ/>
