Quick Family Dinners or Potluck on the Fly

In this day and age of rushing from one place to another, busy moms and dads have little

opportunity to prepare a family dinner that everybody will enjoy. There is also that occasional

potluck dinner that leaves you little time for preparation. This is a quick dish to throw together

for a nice family dinner on the fly, a potluck supper or a Sunday dinner that's sure to impress.

The shopping list will contain three or four boneless, skinless chicken breasts, a one pound

package of medium egg noodles, two cans of cream of chicken soup, one can of cream of

mushroom soup, one can of whole kernel corn, an eight-ounce package shredded cheddar cheese

and if you want, a can of french-fried onions. Is this a long list of ingredients? Maybe, but this

list doesn't contain anything too scary.

Partially frozen chicken breasts are easier to cube. There is little sliding and smashing of the

actual meat. Begin by cubing the chicken and placing it in a hot skillet with about a tablespoon

of oil or butter and cover. If you choose, season the chicken with Mrs. Dash to lend flavor to the

chicken without adding salt. While the chicken cooks, follow the directions for the egg noodles

on the package. If possible, use a pan that can go from stove-top to the oven for the noodles and

save yourself a dish and time.

As soon as the chicken and noodles are cooked thoroughly, drain the noodles and return them to

their pan or a 13 x 9 casserole dish. Carefully toss together the noodles and chicken in this pan.

Next, open the soups and mix them into the chicken noodle concoction. An option at this point

is whether to add the french fried onions now or later. If your family doesn't mind the onions,

add a few according to your tastes. You can use as many or a little as you choose. A last step

for preparation, open the corn, drain, add and gently stir so as to not crush the kernels.

Finally, if your family prone to picking items out, sprinkle the onions on top and then sprinkle

with the cheese. Place the entire dish into a preheated 350 degree oven and warm for fifteen

minutes or until the cheese is melted. Serve with French bread from the grocer's bakery or quick

biscuits picked up in the grocer's fridge.
