AC Yeast Food is composed of 70-78 percent “flour salt” (salt ground to a fine particle size), 10-15 percent wheat starch, 8-12 percent ammonium chloride, and trace amounts of tricalcium phosphate and calcium iodate. This product is used as a dough improver and water conditioner. Acid Leavening Blend contains 54-58 percent sodium acid pyrophosphate, 28-32 percent corn starch, 10-12 percent monocalcium phosphate hydrate, and trace amounts of calcium sulfate dihydrate. With added baking soda, the product may be used as a leavening agent. It may also be used as an acidifier in a variety of baked goods. Tart-O-Cream will be imported in 10-pound cans or 50-pound bags, AC Yeast Food will be imported in 50-pound bags or 1800-pound supersacks, and Acid Leavening Blend will be imported in 50-pound bags.
