20150150274 | MILK PRODUCTS WITH INCREASED WATER BINDING - The present invention relates to a casein concentrate wherein the milk protein comprises not more than 10% serum protein, and wherein the casein micelles have an average size of less than 175 nm in diameter; and wherein the concentrate has a pH below 6,7. Treating milk so as to shift the equilibrium out of the casein micelles and towards the serum phase modifies the micelles so as to allow increased water binding by the casein concentrate. High shear processing also allows for the increased water binding in the milk product, such as cheese. The invention further relates to a process of preparing a modified casein concentrate comprising the steps of treating milk by microfiltration to produce a microfiltration retentate comprising casein micelles and a reduced amount of serum proteins compared to the starting milk, adding an agent capable of modifying the chemical equilibrium between the calcium bound in the casein micelles and present in the serum phase treating the resulting product in a dynamic high pressure shear process. Finally, the invention provides cheese and dairy products which can be prepared by using the casein concentrate of the invention. | 06-04-2015 |

20090217826 | METHOD FOR FEEDING EGGS TO AN EGG BREAKING APPARATUS AND AN EGG BREAKING APPARATUS - The invention relates to an egg breaking apparatus and a method of feeding eggs to an egg breaking apparatus, where eggs are fed to a plurality of egg breaking devices by means of a feed conveyor. Each egg breaking device receives one egg at a time and all egg breaking devices are mounted on a common drive conveyor, where the egg breaking devices are moved in relation to the feed conveyor in a first direction following a substantially vertical first axis at the area of the feed conveyor. The feed conveyor feeds eggs to the egg breaking devices along a substantially horizontal second axis. When near a position at the feed conveyor, the egg breaking devices are tilted about a third axis, which is substantially perpendicular to the first and second axes, in a second direction substantially opposite to said first direction. In a preferred embodiment the egg breaking devices are brought back into their initial, untilted position before or during a period of emptying of the broken egg and after the yolk has left the eggshell upon breaking of the egg, the egg breaking device is preferably tilted downwards in relation to the initial, untilted position, preferably to an angle of approximately 45 degrees below a horizontal plane. During a period of emptying of the egg the egg breaking device may be moved in an uneven pattern, e.g. serrated or corrugated, pattern, causing a vibration of the egg breaking device. It is also preferred, that the egg breaking device performs a second tilting at the end of the period of emptying of the egg. Guiding rail may be provided for guiding the egg breaking devices along a particular track, each egg breaking device preferably being provided with a projecting member capable of interacting with the guiding rail(s). | 09-03-2009 |

20120148714 | METHOD OF MONITORING BREAKING EGGS BY AN EGG BREAKING APPARATUS IN A CYCLIC PROCESS - The invention relates to a method of monitoring breaking of eggs by an egg breaking apparatus in a cyclic process, where eggs are broken using a plurality of egg breaking devices, each egg breaking device breaking one egg having shell and contents at a time and where the contents of each egg is collected in an egg receiving device, each egg receiving device receiving the contents of only one egg in each process cycle. An operator monitors the contents received in the egg receiving devices and identifies egg receiving devices containing abnormal contents using a pointing device. This identification is detected by a detection device and communicated to a reject mechanism, which causes the contents of the identified egg receiving device to be discharged into a rejected product receptacle. The detection device may be a remote sensor, an integrated part of the pointing device or a device located on each of the egg receiving devices. | 06-14-2012 |
20150297035 | METHOD FOR FEEDING EGGS TO AN EGG BREAKING APPARATUS AND AN EGG BREAKING APPARATUS - A method for feeding eggs to an egg breaking apparatus and such an apparatus is provided. In the method eggs are fed to a plurality of egg breaking devices mounted on a egg breaking conveyor by a shell egg in-feed conveyor, each egg breaking device receiving one egg at a time. The shell egg in-feed conveyor is driven by a first drive and the egg breaking conveyor is driven by a second drive, and the position of the first drive and/or the position of the second drive is adjusted in response to changes in the speed of at least one of the shell egg in-feed conveyor and the egg breaking conveyor. The adjustment is preferably performed automatically by a control unit using input from encoders on one or more drive motors, which are preferably servo motors. Size and/or size variation of the eggs may also be taken into account. | 10-22-2015 |
