The host cell produces lycopene and is transformed to express the novel lycopene β-monocyclase that converts lycopene into γ-carotene. The host cell is further transformed to express a lycopene hydroxylase that hydroxylates γ-carotene to 3-hydroxy-γ-carotene and a lycopene β-bicyclase that converts 3-hydroxy-γ-carotene to β-cryptoxanthin.
