A comparison between two renowned restaurants, Le Francais and Gabino Sotelino's Ambria in Chicago with reference to the effects of some major changes they went through is presented. While Le Francais offers a wonderful trio of cold foiegras on brioche, oestra caviar on gelec with a crown of cauliflower creme, and mache lettuce topped with red beet sorbet and truffle oil, Ambria's food seamlessly straddles classic French and modern Spanish.
