The Restaurant 97 conference gave considerable attention to how UK restaurant operators can build brand value. Delegates were invited to consider the way in which Pelican Group was able to develop the Cafe Rouge brand, eventually selling it to Whitbread for more than 133 million pounds sterling in 1997. Consideration was given to what investors tend to look for in restaurant businesses, including product consistency and clear identity, and speakers also looked at some of the restaurant concepts that may come to the UK.

Themed restaurants will continue to become increasingly popular all over the world providing that they are built around the right concept, say expert speakers at the themed restaurant conference in Singapore, Asia. Some projects are bound to fail because the industry is so new, however. Themed dining enterprises such as Planet Hollywood and Hard Rock Cafe are particularly popular. Successful restaurants have the right atmosphere with outstanding food, service and visual effects.
