Article Abstract:

Trends in the food industry are discussed. Due to consumer activism, food manufacturers are obliged to produce innovative products that are nutritionally sound and are conforming to food safety standards. Examples of these trends include the removal of trans fats and reduction of saturated fats in food products. These developments are partly caused by health campaigns in the United Kingdom that seek to reduce the incidence of coronary heart disease.

A focus on quick service restaurants (QSRs) and, details of consumer study based on attitudes towards health and nutrition are presented. The need to provide healthy and nutrious food for customer satisfaction in QSRs is suggested.
