There are fewer incidences of drinking and driving in the province of Ontario in 2000. A survey conducted by Sensors Quality Management Ltd on over 500 servers, bartenders, managers and pub owners in the province reported a general decline, especially for younger customers. The trend is attributed to the heightened awareness of people in the industry regarding their responsibilities to consumers as well as increased pressure from special interest groups.

Canada's Dept of Fisheries and Oceans reports that the country's per capita consumption of fish and other seafood products has risen by 11% during the 1990s. Fish and other seafood have also become luxury items, with prices rising by an average of 20% each year, and with certain species becoming extinct. A growing number of Canadian chefs and restaurateurs have also made high-quality seafood products as one of their top priorities.
