Article Abstract:
Restaurant and food service operators are once again desperately seeking skilled staff as the industry heads into the busy fall 2000 season. Attracting, recruiting and retaining skilled employees remains one of the most challenging issues confronting operators in 2000 because of declining birth rates and a booming national economy. Industry Canada estimates that businesses will have 200,000 more jobs available than people qualified to fill them by Dec 31, 2000.

Foodservice operators are constantly evolving and diversifying as dictated by consumer tastes, but most companies fail to do intensive research before jumping on the band wagon. Even fastfood restaurants with big product development budgets are guilty this move. A personal experience to stress this point is also presented.
