Restaurants are discovering that they have surrendered enormous amounts of revenue to the cafes that are meeting or surpassing customers' expectations for coffee beverages served away from home. The specialty coffee chain is developing its own signature line of salads, soups and sandwiches. The most exciting coffee trend is the growth of coffee as a cold beverage. Many specialty coffee chains across Canada have introduced their own signature iced cappucino drinks, and restaurants are following suit.

Restaurateurs are aiming to satisfy guests' desire for decent spot of tea. The trend is aimed at satisfying customer demand for high-quality tea, especially at full-service restaurants. In addition to fulfilling consumer desire for teas, restaurant operators will also profit if they merchandise them properly. AC Neilsen data for the 52-week period ending Aug 31, 2000, reports that the total tea market grew 3%, reaching $258 million in the supermarket industry alone.

Breakfast and brunch restaurant chain owner Cora Tsouflidou was named Entrepreneur of the Year in the Pinnacle Awards of Foodservice and Hospitality magazine The Pinnacle Awards. Tsouflidou is the owner of Chez Cora Dejeuners, the chain owned by Franchise Cora Inc, which in turn, is one of the subsidiaries of Breakfast People of America International. Tsouflidou started her involvement in the restaurant business with a 29- seat diner in Ville St.-Laurent, Quebec.
