Article Abstract:
The Atlantic slave trade and migration of people resulted in African culinary tastes becoming a fusion of food stuffs from every part of the Earth. The culinary habits of the Western Hemisphere are explored by examining firstly how the basic food crops that were domesticated in Africa or though domesticated elsewhere had become part of the diet of Atlantic Africa before the migration to the Americas and secondly how the ingredients were prepared and seasoned.

The article is the acceptance address of Charles Burnett, the recipient of the Horton Foote Award for special achievement in screenwriting. Killer of Sheep, My Brother's Wedding and To Sleep with Anger are his best known works and in this speech he reveals the origins of Southern themes in his works, Southern values and how they are played out in different generations and the need for having a set of values and a strong connection to the past.

Social changes over the last hundred years in the Deep South have led to changes in the Southern accents. The decline of the plantation system and the economic changes it brought about influenced the culture and social structure of the South as well as the language.
