Barbecuing is extremely popular in Texas. A Texas-style barbecue usually involves beef being marinated over a mesquite grill. Two connoisseurs of the Texas barbecue, Dean Fearing and Stephan Pyles, share their recipes, which include barbecued flank steak and jicama coleslaw.
