Legendary French enologist, Emile Peynaud, the first of the globetrotting wine consultants is widely viewed as the father of modern enology in Bordeaux. He helped to raise the standards of winemaking in Europe and the New World through his books and his consulting business, by convincing proprietors of the importance of harvesting fully ripe grapes and of controlling temperatures in the cellars.

Bizot would like to see Champagne houses classified in the same manner as wineries in Bordeaux and Burgundy. In these winemaking districts, a chateau receives a superior classification if its wines are consistently excellent and the winery follows strict winemaking methods.
