Meat consumption in Europe is forecast to rise, with the carcass meat market increasing 4.1% by volume and the meat savoury product market rising 5.5% in volume by the year 2001. Consumers spent 15.1% of their shopping budget on carcass meats and 8.3% on meat and savoury products in 1996. Home cooking, disposable income and historical trends account for regional variations in the consumption of meat. As less time is spent on cooking, the meat industry sees the future in quality processed meals and snacks.

The European Union's meat industry should concentrate less on maximising meat consumption and more on adapting to meet changing customer demand. according to speakers at the recent Meat '94 conference. Meat processors should supply more ready meals and snacks, adding pasta, potatoes, vegetables and rice. They should also supply cafes and restaurants with presliced meats and sausages, meeting a growing trend towards eating outside the home.

A meat quality labelling system is expected to be introduced in Denmark by the end of the year, following surveys indicating Danish support for the concept. The scheme will involve beer, veal and pigmeat initially and labelled products are expected to be available in supermarkets at the start of 1997. Participating producers will receive random inspections to ensure the scheme's regulations are being adhered to.
