Roto-fermenters have been around for decades, but winemakers found that they overextracted grapes and resulted in wine with no subtlety. The device rotates the grapes, sloshing skins and juice together as a washing machine would. A new version of the roto-fermenter with computerized controls is becoming popular, as it allows winemakers to precisely control the settings. One vintner, Aldo Conterno, used it for his 1995 Barolos to create a Pinot-like flavor.

A man who dines out often has had experiences in which arbitrary and foolish rules kept him from enjoying the dining experience fully. One example is a restaurant that required a man to wear a jacket, even on a very hot day. Restaurants should accommodate customers.
