Sustainable development and history of development in the Mediterranean area, as it exemplifies areas with arrid climates, are discussed. Efficient use of groundwater and surface water will be essential and will depend on new techniques, which will be required to allow for a biomass productivity 2-3 times that of the present to provide enough food.

An analysis is presented on agricultural models and their energy requirements, environmental impact and subsequent market value. Energy requirements are found to vary according to consumer preference, scale of preparation and season of consumption, but no link was found between environmental impact and industrial or homemade processing.
