Article Abstract:
Chilled products, which have a good image with consumers, are booming in France. This vitality in the chilled products department is attracting more and more new products, such as fruit juice, filled crepes, and other chilled ready products. Innovation is the driver of the chilled products department, but manufacturers are using the longer use-by date to win on the shelves. Thanks to different packaging modes - sous-vide, adjusted sous-vide, modified atmosphere and brushing with gas, the extension of the use-by date no longer poses technical problems, but the use-by limit has now become a marketing too. It is difficult to say whether today's trend is towards longer or shorter use-by dates. However consumer's search for more taste should benefit a use-by date which guarantees the products taste.
