Article Abstract:
The retail market for meat and poultry in Italy was studied, covering processed and unprocessed meat. Processed meat includes pork-based items such as bacon, ham and salami while unprocessed refers to fresh and frozen beef, chicken, pork, mutton, goat and horse meat. The study showed that the majority of value sales came from unprocessed meat products. In 1995, sales of unprocessed meat accounted for 67.4% of sales by value. However, the value of sales for the same item declined to 63.2% in 1998. Meat products will suffer a decline in the coming years due to health reasons.
