Article Abstract:
Research was conducted to purify and characterize three thermostable endochitinases of a noble Bacillus strain, MH-1, isolated from chitin-containing compost. The microorganism was observed to grow only in colloidal chitin supplemented with yeast extract and (2,6-O-dimethyl)-beta-cyclodextrin and not on any of the usual media for actinomyces. Results indicate that the three enzymes were inert to pNP-GlcNAc and that their activities were inhibited by AgCl, (GlcNAc)2 and HgCl2.

Article Abstract:
A study was conducted to analyze the importance of individual mannoproteins and chitin in conferring resistance to nisin upon yeast cells. Yeast cells were obtained by centrifugation and grown in a YPD medium at 25 degrees C. RNA was then isolated using the hot phenol extraction technique. Results indicated that cell way protein 2 supports a critical function in protecting cells against antimicrobial peptides.

Chitosan has some antimicrobial activity in some foods, but it may not have wide applicability as a food preservative. Partial hydrolysis increases its antimicrobial activity slightly but at the expense of extra processing.
