Results describe cloning and expression of the lip gene of Staphylococcus hyicus in Lactococcus lactis. Data reveal that exporting lip gene requires an accessory system and lipase folding is dependent on the kinetics of the enzyme synthesis.

Article Abstract:
Lactococcus lactis subsp. lactis biovar diacetylactis mutants capable of growing in chemical-defined medium with leucine produce a large amount of alpha-acetolactate (AL) which is converted into diacetyl in the presence of oxygen. The mutants lack alpha-acetolactate decarboxylase (AldB) due to a mutation in the aldB gene. The growth of the mutants in milk is unaffected and the cells accumulate a large amount of AL. They produce ten times the amount of diacetyl produced by the wild-type cells.

Research is conducted on the survival and physiology of Lactococcus lactis in gastrointestinal systems of rats. Strains marked with two reporter genes are used to differentiate lactic acid bacteria from other intestinal and food bacteria.
