Identification and population dynamics of yeasts in sourdough fermentation processes by PCR- denaturing gradient gel electrophoresis
Article Abstract:
Investigating samples of four previously described sourdoughs monitors changes of yeast population dynamics during sourdough fermentation processes. The results provide the knowledge to select suitable starter preparations for specific sourdough fermentations that can control the process and vice versa to obtain a desired bread quality by adjusting the fermentation process parameters to the growth requirements of the suitable microorganisms.

Marker rescue studies of the transfer of recombinant DNA to Streptococcus gordonii in vitro, in foods and Gnotobiotic rats
Article Abstract:
Results indicate that the efficiency of marker rescue, used to monitor the transfer of bacterial and transgenic plant DNA by transformation, in plants, food and rats is dependent on the donor DNA type. Data suggest that absence of competence-stimulaing factors leads to lack of marker rescue in transformation studies.

A study is conducted to investigate the aggregation capability of Lactobacillus coryniformis. Phenotypic characterization of aggregation phenotypes of Lactobacillus coryniformis reveal that strain DSM 20001T coaggregated with Escherichia coli K88, Campylobacter coli and Campylbacter jejuni.
