Glutamine synthesis is essential for growth of Streptococcus thermophilus in milk and is linked to urea catabolism
Article Abstract:
Growth of a glutamine synthetase-deficient mutant of Streptococcus thermophilus was compared to that of the parent strain in milk that was or was not supplemented with ammonium chloride, glutamine, or the urease inhibitor flurofamide. It is concluded that one of the functions of urease is to supply ammonia for the synthesis of glutamine.

Aspartate biosynthesis is essential for the growth of Streptococcus thermophilus in milk, and aspartate availability modulates the level of urease activity
Article Abstract:
The carbon dioxide metabolism of Streptococcus thermophilus is examined to evaluate the phenotype of a phosphoenolpyruvate carboxylase-negative mutant obtained by replacement of a functional ppc gene with a deleted and inactive version. Results reveal that aspartate in the milk is not enough for the growth of Streptococcus thermophilus.

Bacterial cinnamoyl esterase activity screening for the production of a novel functional food product

Lactobacillus helveticus MIMLh5 is selected for its strong cinnamoyl esterase activity on chlorogenic acid and used for the preparation of a food product containing a high concentration of free caffeic acid. The novel food product has displayed high total antioxidant power and potential probiotic properties.
