Article Abstract:

The immunity protein of plantaricin 423 and the complete sequence of plasmid pPLA4 are described. Plataricin 423 has shared high sequence similarity with the pediocin PA-1 operon, but no cross-reactivity is recorded between the immunity proteins of plantaricin 423 and pediocin PA-1.

Sourdough bread made from wheat and nontoxic flours and started with selected lactobacilli is tolerated in celiac sprue patients

Article Abstract:

A study was conducted aimed at producing sourdough bread that can be tolerated by celiac sprue (CS) patients. Results show that a bread technology that uses lactobacilli nontoxic flours with a long fermentation time could be the best tool for decreasing level of gluten intolerance.
