Carbon dioxide and nisin act synergistically on Listeria monocytogenes
Article Abstract:
Results demonstrate that carbon dioxide and nisin synergistically influence the growth of Listeria monocytogenes. Data show that membrane permeabilization is altered consistent with nisin's action being influenced by the membrane fluidity.

Elucidation of Listeria monocytogenes contamination routes in cold-smoked salmon processing plants detected by DNA-based typing methods
Article Abstract:
Thorough cleaning and decontamination in fish processing plants can eliminate Listeria monocytogenes, but it can reappear due to its ubiquitous nature. In one fish processing plant, random amplified polymorphic DNA (RAPD) analysis showed that the same RAPD type was found over a four-year period despite the use of routine cleaning procedures.

Bioenergetic mechanism for nisin resistance, induced by the acid tolerance responsible of Listeria monocytogenes
Article Abstract:
A study to examine the bioenergetics of Listeria monocytogenes, induced to an acid tolerance response (ATR) is conducted. Changes in bioenergitic parameters were consistent with the increased resistance of ATR-induced cells to the antimicrobial peptide nisin which also explains the increased resistance of Listeria monocytogenes to the other lethal factors.
